Lou'S Chuck Wagon Casserole - cooking recipe

Ingredients
    1 green pepper, chopped
    2 onions, chopped
    4 Tbsp. shortening
    1 lb. ground beef
    3 1/2 c. tomatoes (two 16 oz. cans)
    1 tsp. salt
    1 c. mushrooms (optional)
    1/4 lb. American cheese, shredded
    1 (8 oz.) pkg. noodles, uncooked
Preparation
    Lightly saute pepper and onion in shortening.
    Push aside. Saute meat, then combine all.
    Sprinkle uncooked noodles over top. Add tomatoes and mushrooms, including juice.
    Bring liquid to a boil.
    Reduce heat, cover and simmer for 45 minutes, stirring several times.
    Sprinkle cheese over top and continue simmering 15 minutes longer.
