Orange Coconut Muffins - cooking recipe
Ingredients

3/4 c. all-purpose flour
3/4 c. whole wheat flour
2/3 c. toasted wheat germ
1/2 c. sugar
1/2 c. coconut
1 1/2 tsp. baking soda
1 tsp. salt
1 c. sour cream
2 eggs
1 (11 oz.) can mandarin oranges, drained
1/2 c. chopped nuts
Preparation

In large bowl, combine flours, wheat germ, sugar, coconut, baking soda and salt.
In small bowl, combine sour cream, eggs and oranges.
Stir into flour mixture just until moistened.
Fold in nuts.
Spoon into paper lined muffin cups, filling 3/4 full.
Bake in preheated 400\u00b0 oven for 18 to 20 minutes.
Makes 12 muffins.
