Stir-Fry Chicken - cooking recipe

Ingredients
    1 lb. chicken, cut in bite size pieces
    1 to 2 carrots, sliced
    1 green pepper, in thin strips
    1 onion, sliced
    fresh mushrooms (6 or 7), sliced
    1 Tbsp. oil (Pam spray)
    1 can pineapple chunks, drained
    garlic and soy sauce to taste (optional)
Preparation
    Heat oil on medium-high heat.
    Add chicken and cook for about 1 minute, stirring.
    Add vegetables and stir until crisp and tender.
    Add pineapple and heat.
    Serve over rice.
