Pineapple Upside Down Cake - cooking recipe

Ingredients
    2 Tbsp. margarine or butter
    1/2 cup brown sugar
    4 pineapple slices, halved
    4 maraschino cherries, halved
    1/3 cup shortening
    1 1/4 cup all purpose flour
    1/2 cup sugar
    2 tsp. baking powder
    1/2 tsp. salt
    1/2 cup pineapple syrup
    1/2 tsp. lemon peel
    1 egg
Preparation
    Preheat oven to 350\u00b0. Melt margarine in 8 inch square pan. Spread brown sugar on bottom of pan. Arrange pineapple on top and place a cherry half in each hollow. In a bowl stir shortening to soften. Sift in flour, sugar, baking powder and salt. Add syrup, lemon peel and egg. Mix until all flour is dampened, beat for 2 minutes. Pour batter over pineapple. Bake for 30 to 35 minutes. Let cake stand in pan for 10 minutes and invert on plate. Serve warm with whipped cream or best with ice cream.
