French Baked Beans - cooking recipe

Ingredients
    2 c. washed navy beans
    1/2 tsp. soda
    2 lb. salt pork
    salt to taste
    1/4 tsp. white pepper
    1 1/2 c. brown sugar
    1/2 tsp. ground ginger
Preparation
    Soak beans overnight with 1/2 teaspoon soda.
    In morning, drain and cover with fresh water.
    In large heavy kettle, boil until tender with 2 pounds salt pork, cut into walnut sized pieces; add salt and pepper.
    Add brown sugar and ginger.
    Place kettle in oven or transfer to baking dish.
    Bake 4 hours at 300\u00b0.
    Add water if necessary.
    Be sure not to burn.
    Beans will have glazy top.
