Herb And Garlic Pork Roast - cooking recipe
Ingredients

6 garlic cloves, peeled
2 tsp. salt
2 Tbsp. finely chopped parsley
1 Tbsp. sweet Spanish or Hungarian paprika
1/2 tsp. oregano
1/4 c. olive oil
1 (3 lb.) boneless pork loin, tied
2 lb. small new potatoes, peeled
Preparation

Pound garlic with salt to form a smooth paste.
Add parsley and pound until incorporated.
Stir in paprika and oregano, then gradually stir in olive oil to form thick, oily but not homogenous mixture.
Rub mixture over pork loin, then cover and refrigerate at least overnight or for up to 2 days, turning loin from time to time.
Bring to room temperature before roasting.
