Ingredients

1 large coconut, drained, cracked, meat peeled off and grated
2 1/4 c. flour
3 tsp. baking powder
1 tsp. salt
1/2 c. shortening
1 1/2 c. sugar
3 egg yolks (reserve whites for frosting)
1 c. + 3 Tbsp. milk (part coconut milk)
1 tsp. vanilla
Preparation

Sift flour, salt and baking powder.
Cream shortening and sugar.
Add egg yolks, milk and vanilla.
Add all dry ingredients to the creamed mixture alternately with milk.
Grease 9-inch cake pans.
Bake at 350\u00b0 until done.
