Carrot Soup - cooking recipe

Ingredients
    1/4 c. onion, finely chopped
    4 c. carrots, thinly sliced
    3 c. vegetable broth
    3/4 c. water
    1/4 tsp. ground nutmeg
    1 1/2 Tbsp. creamy peanut butter
    1/4 c. heavy cream
Preparation
    Boil together the onion, carrots, broth, water and nutmeg. Simmer, covered, until carrots are tender.
    Cool enough to puree in blender.
    Puree until carrot mixture is smooth.
    Add peanut butter while pureeing.
    Pour into saucepan and stir in cream. Reheat soup, stirring often and serve at once.
    Serves 6.
