Cottage Potatoes - cooking recipe

Ingredients
    5 large potatoes, cooked, peeled and diced
    2 c. (8 oz.) shredded Cheddar cheese
    1 medium onion, chopped
    1/2 c. chopped green pepper
    1 (2 oz.) jar chopped pimiento, drained
    1 tsp. salt
    1/2 c. milk
    1 tsp. minced parsley
    1 slice bread, crumbled
    1/4 c. butter, melted
    1/2 c. cornflakes, crushed
Preparation
    Combine everything except butter, milk and cornflakes.
    Place in a 9 x 9-inch baking pan.
    Mix the butter and milk; pour over potato mixture.
    Sprinkle with cornflakes.
    Bake for 30 minutes at 400\u00b0.
    Makes about 6 servings.
