Crab Soup - cooking recipe

Ingredients
    1/4 c. butter or margarine
    1/4 c. all-purpose flour
    5 c. skim milk
    1/4 c. sliced scallions
    1/4 c. chopped celery
    6 drops hot pepper sauce
    16 oz. flaked imitation or fresh crab meat
Preparation
    Melt butter in a large saucepan.
    Add celery and cook 3 minutes, stirring often, until crisp-tender.
    Add flour and stir over low heat until frothy.
    Cook about 3 minutes, stirring often to prevent browning.
    Add hot pepper sauce.
    Gradually stir in milk.
    Increase heat to medium and bring to a boil.
    Immediately reduce heat so milk simmers.
    Add crab meat, return to a simmer and cook about 3 minutes until crab is hot.
    Stir in scallions. Makes 4 servings.
