Potato Pancakes - cooking recipe

Ingredients
    4 large potatoes, pared
    1/4 c. onions, grated
    2 eggs, slightly beaten
    2 Tbsp. flour
    3/4 tsp. salt
    dash of nutmeg
    salad oil or shortening
    chilled applesauce
Preparation
    Grate potatoes; drain very well.
    Pat dry.
    Measure 3 cups grated potatoes and combine with onion, eggs, flour, salt, nutmeg and pepper.
    In a large skillet, slowly heat oil (1/8-inch deep) until very hot, but not smoking.
