Orzo With Pine Nuts And Basil - cooking recipe

Ingredients
    salt and freshly ground pepper to taste
    1 1/2 c. orzo
    1 c. pine nuts
    2 Tbsp. olive oil
    2/3 c. tightly packed basil leaves, cleaned
Preparation
    Bring 3 quarts water to boil.
    Add orzo; cook until tender, 6 to 8 minutes.
    Drain thoroughly.
    Place pine nuts in large dry skillet and cook, stirring, over medium heat until brown, 5 minutes.
    Mix toasted pine nuts with orzo in bowl; season with salt and pepper and toss with olive oil.
    Just before serving, finely chop basil and fold into orzo.
    Makes 6 to 8 servings.
