Salmon Puffs - cooking recipe
Ingredients

2 c. cooked salmon
1/2 tsp. salt
1/8 tsp. pepper
1/2 c. soft bread crumbs
1 Tbsp. lemon juice
3 eggs, separated
Preparation

Chop salmon fine. Add salt, pepper, crumbs and lemon juice. Add beaten egg yolks, mixing thoroughly, then fold in stiffly beaten egg whites. Place in greased custard cups.
Set in pan of hot water and bake in moderate oven at 375\u00b0 for 30 minutes. Unmold on a hot platter. Garnish each with a sprig of parsley and serve with a sauce.
Serves 6.
