Vegetarian Macaroni - cooking recipe
Ingredients

1 scant c. macaroni, uncooked
1 c. low-fat cottage cheese
1 tsp. basil
1 tsp. oregano
1 Tbsp. Parmesan cheese
4 oz. thinly sliced part skim Mozzarella cheese
1 c. chopped red or green peppers
1 zucchini, thinly sliced (or 1 bunch fresh broccoli)
1 c. chicken broth
1 onion, thinly sliced
8 oz. can tomato paste
1 Tbsp. bread crumbs
Preparation

Preheat oven to 350 degrees.
Spray 8-inch baking dish with PAM.
Layer macaroni in dish.
Spread cottage cheese over macaroni. Sprinkle on spices.
Then layer vegetables.
Add Mozzarella evenly over vegetables.
Pour chicken broth over entire mixture.
Spread on tomato paste.
Sprinkle top with bread crumbs and Parmesan cheese.
Cover with aluminum foil.
Bake for 1 hour at 350 degrees.
