Mimi'S Carrot Cake - cooking recipe
Ingredients

2 c. sugar
1 1/4 c. oil
4 eggs
2 tsp. vanilla
3 c. flour
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
2 tsp. cinnamon
1 c. crushed pineapple, drained
1 1/2 c. coconut
3/4 c. pecans
Preparation

Cream sugar, oil, eggs and vanilla until fluffy.
Combine flour, soda, baking powder, salt and cinnamon.
Gradually blend into creamed mixture.
Mix until smooth.
Stir in pineapple, carrots, coconut and nuts.
Put into 2 (10-inch round greased pans).
Bake at 350\u00b0 for 35 to 45 minutes.
Frost top and sides with Cream Cheese Frosting.
