Ingredients

3 eggs
3/4 c. sugar
3 Tbsp. soft shortening
2 3/4 c. sifted flour
4 Tbsp. baking powder
1 tsp. salt
1/4 tsp. nutmeg
1 tsp. mace or 2 tsp. vanilla
1 c. mashed potato (unseasoned)
Preparation

Beat well eggs. Beat in sugar and shortening. Stir in flour, baking powder, salt, nutmeg and mace or vanilla. Sift together and stir in potatoes. Chill dough for 2 hours. Heat fat while rolling and cutting doughnuts. Fry until brown. Drain over kettle, then on absorbent paper in warm place. Serve plain or sugared. To sugar, put white powdered sugar in a paper bag and shake the doughnuts.
