Lemon Meringue Pie - cooking recipe
Ingredients

1 pie crust, baked
1/3 c. cornstarch
3 egg yolks, slightly beaten
1/4 c. lemon juice
3 Tbsp. butter or margarine
1 Tbsp. grated lemon rind
1 1/2 c. sugar
1 1/2 c. water
1/4 tsp. cream of tartar
3 egg whites
6 Tbsp. sugar
Preparation

Mix sugar and cornstarch in a 2-quart saucepan.
Stir water in gradually.
Stir over medium heat, bringing mixture to boil.
Boil and stir 1 minute more.
Take off heat.
Stir about half of mixture into egg yolks, then return to saucepan.
Mix well. Return to a boil, stirring constantly.
Boil and stir 1 minute more and take off heat.
Stir in lemon juice, butter and rind. Pour into baked shell.
Turn oven to 400\u00b0.
