Tabboulen Salad - cooking recipe

Ingredients
    1 c. bulgar wheat
    2 c. water
    3 medium tomatoes, chopped
    1/2 c. chopped parsley
    1/2 c. minced scallion, chive or onion
    1/4 c. lemon juice
    2 tsp. salt
    1/2 c. cukes, chopped small
    2 Tbsp. fresh mint, crushed
    1/3 c. olive oil or regular
Preparation
    Place bulgar and water in large bowl and let soak at least 1 hour; drain.
    Add remaining ingredients except oil; toss.
    Just before serving, stir in oil.
    Serve on Romaine lettuce.
    Tastes better the second day.
