Creole Peppers - cooking recipe

Ingredients
    2 or 3 green peppers, coarsely cut
    1 medium bunch celery, coarsely cut
    1 medium onion, coarsely cut
    1 tsp. salt
    dash of pepper
    4 slices bacon
    3 Tbsp. bacon drippings
    1 pod hot pepper
    2 Tbsp. corn meal
    1 can diced tomatoes
Preparation
    Cook bacon until crisp; set aside.
    Add cut up peppers, celery and onion to bacon drippings.
    Slowly saute until onion is tender, but not brown.
    Add tomatoes, hot pepper, salt and pepper. Cover; simmer 20 minutes.
    Blend corn meal with a little water; stir into simmering mixture.
    Cover and simmer another 5 minutes. Crumble bacon on top at serving time.
