Chicken In Apricot Sauce - cooking recipe
Ingredients

1 1/2 lb. chicken thighs, skinned
1/3 c. apple juice concentrate
1/2 c. snipped dried apricots
1 Tbsp. Dijon mustard
1/2 tsp. ginger
2 Tbsp. toasted sliced almonds
Preparation

Rinse chicken and pat dry.
Place in casserole and let stand in apple juice for 5 minutes.
Stir apricots, ginger and mustard. Pour over chicken.
Bake at 325\u00b0 for 30 minutes, then transfer to serving dish.
Spoon sauce over top and sprinkle with almonds.
