Sicilian Meat Loaf - cooking recipe
Ingredients

2 eggs, beaten
1/2 c. tomato juice
3/4 c. bread crumbs
2 Tbsp. snipped parsley
1/2 tsp. dried oregano
2 lb. ground chuck
Mozzarella cheese
1/4 tsp. salt
1/4 tsp. pepper
1 clove garlic (minced)
ham slices
Preparation

Combine the eggs and tomato juice.
Stir all ingredients except ground chuck, ham and cheese, into the egg mixture.
Add the ground chuck and mix well.
Put onto waxed paper to form a 10 x 8-inch rectangle.
Arrange ham slices on meat and Mozzarella cheese on top.
Start from short end and roll up.
Place roll seam down in pan.
Bake at 350\u00b0 for 1 1/4 hours.
Overlap cheese on top of meat and put back in oven to melt.
