Pumpkin Soup - cooking recipe

Ingredients
    2 Tbsp. butter
    1 onion, diced
    2 stalks celery, diced
    1 carrot, diced
    2 Tbsp. flour
    1 c. canned or cooked pumpkin
    3 c. chicken broth
    1/8 tsp. white pepper
    pinch of sugar
Preparation
    Melt 2 tablespoons of butter in a soup pot.
    Saute the onion. Add the diced celery and carrot.
    Cook a little, allowing the vegetables to glaze slightly.
    Remove from heat.
    Blend in 2 tablespoons of flour.
    Add pumpkin and stir.
    Gradually add chicken broth, white pepper and sugar.
    Bring to a boil, uncovered.
    Cover and simmer 30 minutes.
    Better with reheating.
