1 lb. mild or hot Italian sausage
1 medium size onion, chopped
1 (15 1/2 oz.) jar spaghetti sauce
1 (6 oz.) can pitted black olives
6 oz. sliced Mozzarella cheese
2 large eggs
1 c. milk
1 Tbsp. salad oil
1 c. all-purpose flour
1 tsp. salt
1/4 c. Parmesan cheese
Preparation

Crumble sausage meat over medium heat into a 12-inch frying pan. Add onion and cook until onion is limp and sausage is well browned, about 10 minutes. Discard fat and stir in sauce, mushrooms and olives. Heat until bubbly, then pour into 9 x 13-inch greased pan. Arrange Mozzarella over top. Blend eggs, milk, oil, flour and salt until smooth. Evenly pour over Mozzarella, then sprinkle with Parmesan cheese. Bake in 400\u00b0 oven until crust is puffed and golden, about 25 minutes. Cut into squares at once.
