Creole Catfish - cooking recipe

Ingredients
    2 Tbsp. olive oil
    3 c. chopped green onion
    1 c. chopped onion
    1 c. chopped bell pepper
    2 c. chopped parsley
    1 c. white wine
    garlic to your taste
    3 c. chopped tomatoes
    2 1/2 c. V-8 juice
    1 Tbsp. Worcestershire sauce
    4 tsp. salt
    1/4 tsp. cayenne pepper
    3 to 4 c. cubed raw catfish
Preparation
    Saute, in olive oil, green onion, onion, bell pepper, parsley, white wine and garlic for 5 to 7 minutes.
    Add tomatoes, V-8 juice, Worcestershire sauce, salt, cayenne pepper and catfish. Simmer, covered, for 20 to 30 minutes.
    Serve over cooked rice.
