1 large onion, chopped
1 large green pepper, chopped
1 lb. smoked sausage, sliced
4 Tbsp. vegetable oil, divided
2 eggs, beaten
3/4 c. buttermilk
1 c. self-rising corn meal mix
1 (8.5 oz.) can cream-style corn
1 c. (4 oz.) shredded Cheddar cheese
Preparation

Heat oven to 400\u00b0. In 10 1/2-inch cast-iron skillet, cook onion, pepper and sausage in 1 tablespoon vegetable oil until vegetables are tender.
