Springtime Carrot Cake - cooking recipe

Ingredients
    1 1/2 c. salad oil
    2 c. sugar
    3 1/2 Tbsp. hot water
    5 egg yolks
    2 1/2 c. sifted cake flour
    2 1/2 tsp. cinnamon
    1 1/2 tsp. nutmeg
    1 1/2 tsp. baking soda
    1/2 tsp. salt
    1 1/2 c. grated carrots
    1 c. chopped nuts
    5 egg whites
Preparation
    Combine salad oil, sugar, hot water and egg yolks.
    Beat on low speed of mixer until well blended.
    Do not overbeat.
    Sift together flour, cinnamon, nutmeg, baking soda and salt. Alternately add liquid ingredients, carrots and nuts to dry ingredients, blending well.
    Beat egg whites until stiff.
    Fold into cake batter.
    Pour into 3 (8-inch) cake pans and bake at 300\u00b0 for 50 to 60 minutes or until well done.
