Creamy Chicken Manicotti - cooking recipe

8 oz. pkg. Skinner manicotti (uncooked)
1 c. sour cream
2 Tbsp. minced onion
1/4 tsp. salt
dash of pepper
1 (3 oz.) pkg. cream cheese, softened
2 c. diced cooked chicken or turkey
1/2 c. milk
1/4 c. grated Parmesan or Italian blend cheese
2/3 c. sliced mushrooms
1 tsp. chopped parsley
8 oz. Velveeta, cubed
Preparation

Cook manicotti; drain well.
Stir together sour cream and cheese until smooth in large bowl.
Add chicken, drained mushrooms, onion, parsley, salt and pepper.
Blend well.
Spoon mixture into manicotti.
Arrange in single layer in a 9 x 13 x 2-inch baking dish.
Combine Velveeta and milk and heat thoroughly.
Stir often until cheese is melted and mixture is smooth.
Pour over manicotti and sprinkle with Parmesan.
Cover with foil and bake at 350\u00b0 for 35 to 40 minutes.
