Cajun Red Beans And Rice - cooking recipe

Ingredients
    2 lb. dried red beans, soaked overnight
    2 c. onions, chopped
    1/2 c. green onions, chopped
    1/2 c. chopped green pepper
    1 1/3 Tbsp. minced garlic
    2 Tbsp. minced parsley
    1 lb. hot smoked sausage, cut in 1-inch cubes
    1 large ham bone
    cooked rice (enough to serve eight)
    1/2 tsp. black pepper
    1/3 tsp. cayenne
    1/3 tsp. crushed red pepper
    2 bay leaves
    1/8 tsp. dried basil
    2 qt. cold water (or more)
Preparation
    Drain beans that have soaked overnight.
    Add fresh, cold water to cover beans well.
    Add to this the onions, green pepper, garlic, parsley, ham bone, black, red and cayenne peppers, bay leaves and basil.
    Bring to a boil.
    Lower heat and cook slow, but keep bubbling, until beans are tender, about 3 hours.
    Salt to taste after ham cubes have blended with mixture.
    Continue cooking until a thick gravy has formed.
    Add water from time to time during cooking.
    Serve over rice.
