Cauliflower Quiche - cooking recipe

Ingredients
    1 (8 oz.) pkg. frozen cauliflower
    vegetable cooking spray
    1/2 c. chopped green pepper
    1/3 c. finely chopped onion
    1 c. (4 oz.) shredded low-fat Cheddar cheese
    1 c. skim milk
    3 eggs
    1/2 c. biscuit mix
    1/4 tsp. paprika
    1/8 tsp. pepper
Preparation
    Cook cauliflower according to package directions omitting salt; drain well and coarsely chop.
    Place cauliflower on paper towels and squeeze until barely moist.
    Coat a 9-inch pie plate with cooking spray.
    Layer cauliflower, green pepper, onion and cheese in pie plate.
    Combine remaining ingredients in container of electric blender; process 15 seconds or until well blended. Pour into pie plate.
    Bake at 375\u00b0 for 30 to 35 minutes or until set.
    Let stand 5 minutes before serving.
    Yield:
    6 servings (about 167 calories per serving).
