Orange Sweet Potato Casserole - cooking recipe

Ingredients
    2 lb. (6 medium) cooked or canned sweet potatoes, drained
    1/4 lb. (1 stick) butter (reserve 6 Tbsp.)
    6 Tbsp. brown sugar (reserve 2 Tbsp.)
    3 Tbsp. dark rum
    1/2 tsp. salt
    1 can mandarin oranges or 4 tangerines
    2 Tbsp. chopped pecans or whole pecans for decoration
Preparation
    Process sweet potatoes, 2 tablespoons butter, 4 tablespoons brown sugar, rum and salt.
    Fold in 1/2 of oranges.
    Spread in 2-quart buttered casserole dish.
    Top with remaining oranges and whole nuts in decorative pattern.
    Combine remaining sugar, butter and chopped pecans.
    Sprinkle over top.
    Bake at 375\u00b0 for 30 minutes or until hot.
