Eggplant Casserole - cooking recipe

Ingredients
    2 large eggplant
    1 Tbsp. margarine
    1 large onion
    2 eggs, beaten
    2 c. Cheddar cheese, shredded
    buttered bread crumbs
Preparation
    Peel eggplant and cut into slices.
    Boil in salt water until tender; drain and mash.
    Chop onion and saute in margarine. Combine other ingredients and top casserole with buttered bread crumbs. Bake at 350\u00b0 for 30 minutes.
