Curried Spicy Potatoes(4 Servings) - cooking recipe

Ingredients
    1 1/2 lb. white potatoes (4)
    3 Tbsp. water
    2 tsp. curry powder
    2 Tbsp. vegetable oil
    1/2 c. chopped shallots
Preparation
    Cook potatoes in boiling salted water until tender, 30 minutes. Cool.
    Peel and cut into 1-inch cubes.
    Place in medium bowl.
    Add 3 tablespoons of water and curry powder.
    Toss to coat.
    Season to taste with salt.
    Heat vegetable oil in large skillet.
    Add shallots and potatoes.
    Cook until crusty and golden brown, for 15 minutes.
