Beet Salad - cooking recipe
Ingredients

1 small box lemon jello
1 1/2 c. crushed pineapple
1 c. sugar
1 1/2 c. liquid beet juice
1 1/2 c. beets, chopped
1/2 tsp. salt
1 Tbsp. vinegar
8 oz. cream cheese (or Neufchatel which is lower calorie)
Preparation

Dissolve jello in hot beet juice. Mix beets and cream cheese. Stir in beets, cream cheese and pineapple. Put in refrigerator to harden. Serve on lettuce leaves topped with mayonnaise.
