Baked Eggplant Parmigiana - cooking recipe

Ingredients
    1/4 c. oleo (room temperature)
    3 Tbsp. Parmesan cheese, grated
    1 eggplant, peeled and sliced (1/2-inch slices)
    salt and pepper to taste
    parsley for garnish
Preparation
    Blend butter and Parmesan.
    Spread on both sides of eggplant slices.
    Sprinkle with salt and pepper.
    Arrange slices in single layer on a Pam-sprayed baking sheet.
    Bake in preheated 400\u00b0 oven 15 or 20 minutes or until tender.
    Sprinkle with chopped parsley.
