Carrot Nut Cake - cooking recipe
Ingredients

2 c. sugar
2 c. self-rising flour
3 tsp. cinnamon
1/4 tsp. nutmeg
2 tsp. soda
1 tsp. salt
4 eggs
1 1/2 c. vegetable oil
2 tsp. vanilla
3 c. grated carrots
1 c. chopped pecans
1 (8 oz.) can crushed pineapple
1 (3 1/2 oz.) can grated coconut
Preparation

Mix first 5 ingredients.
Beat eggs, oil and vanilla.
Add dry ingredients to eggs, oil and vanilla; mix well.
Then add carrots, pecans, pineapple and coconut.
Grease and flour tube pan.
Bake one hour at 350\u00b0.
Let cool before removing from pan.
No frosting needed.
