Working Girls' Hopping John - cooking recipe

Ingredients
    1/3 c. diced bacon
    `1/4 c. chopped onion
    1/4 c. chopped green pepper
    1 bay leaf
    1 (1 lb.) can dried black-eyed peas
    1 c. water
    1 c. Minute rice
Preparation
    Fry bacon in saucepan until crisp.
    Add onion and pepper; cook until onion is lightly browned.
    Add bay leaf and peas with liquid.
    Cover and simmer 5 minutes.
    Stir in water and rice. Bring to boil; cover and simmer 5 minutes longer.
    Remove bay leaf before serving.
    Makes 4 servings.
