Ruth'S Eggplant Casserole - cooking recipe

Ingredients
    1 1/2 lb. unpared eggplant, pared
    3 medium onions, chopped
    2 Tbsp. butter
    2 egg yolks, beaten
    1/2 c. grated Parmesan cheese
    1 tsp. salt
    1 c. dry bread crumbs
Preparation
    Cook eggplant (covered) in boiling water about 10 minutes. Drain. Add remaining ingredients and pour into a greased casserole dish. Bake at 350\u00b0 for 30 minutes or until brown. Serves 6.
