Mini Pecan Muffins - cooking recipe

Ingredients

40 crushed Ritz crackers
2 c. chopped nuts
1 c. white sugar
1 c. brown sugar
2 tsp. vanilla

Preparation

Mix together ingredients; set aside. Now beat 6 egg whites until stiff. Mix in ingredients. Put in mini muffin pan and bake at 350\u00b0 for 10 to 15 minutes. Cool before removing from pan. Makes about 48 mini muffins.
