Favorite Potato Salad - cooking recipe

Ingredients
    6 medium potatoes, cooked and cubed
    1 small onion, chopped
    4 or 5 sprigs parsley
    1 Tbsp. vinegar
    1/4 c. salad oil
    1 pkg. Italian seasoning mix
    1 c. mayonnaise
    1 c. diced celery
    3 hard-boiled eggs, chopped
    3 Tbsp. minced dill pickles
    salt and pepper to taste
Preparation
    Cook and drain cubed potatoes.
    Combine warm potatoes with onion and parsley.
    Combine vinegar, oil, salt and pepper.
    Pour over potatoes; toss lightly with fork.
    Chill for 2 hours or overnight.
    Add all remaining ingredients.
    Mix gently.
    Note:
    Add 3/4 teaspoon mustard to mayonnaise for extra zip.
    Yields 12 servings.
