Cheesy Vegetable Chowder - cooking recipe

Ingredients
    4 c. chicken broth
    8 celery ribs, sliced
    4 carrots, sliced
    2 medium potatoes, peeled and cubed
    1 large onion, chopped
    1/2 tsp. pepper
    2 c. frozen whole kernel corn, thawed
    1/4 c. butter or margarine
    1/4 c. all-purpose flour
    2 c. milk
    2 c. shredded Cheddar cheese
    chopped fresh parsley (optional; garnish)
Preparation
    Combine first 6 ingredients in large pot and bring to a boil. Cover and simmer 15 to 20 minutes, until vegetables are tender. Remove from heat and add corn. Melt butter in saucepan over low heat. Add flour and blend until smooth. Gradually add milk, stirring constantly, until mixture has thickened. Add cheese and blend. Add cheese mixture to vegetables and heat, stirring constantly. Garnish with parsley, if desired.
