Roast Young Stuffed Pig - cooking recipe

Ingredients
    1 suckling pig (approximately 35 lb.)
    3 stalks celery, chopped
    3 medium-sized apples, coarsely chopped
    2 pkg. stuffing mix and seasoning
    2 medium-sized onions, chopped
    2 c. long grain brown rice
    2 sticks butter or margarine, melted
    2 c. seedless raisins
    1 medium bell pepper, chopped
    1 small red apple (for garnish)
    2 pkg. roasting skewers with nylon cord
Preparation
    Note:
    Must use large commercial oven, 3 x 3-foot.
