Pasta Florentina - cooking recipe

Ingredients
    3 cloves garlic
    1 small onion, chopped
    8 oz. fresh mushrooms
    10 oz. chopped spinach
    28 oz. can Italian plum tomatoes, sliced with juice
    1 lb. corkscrew pasta, cooked (or wheels, bows)
    oregano to taste
    basil to taste
    bay leaf to taste
    salt and pepper to taste
    grated cheese for garnish
Preparation
    Thaw and drain spinach.
    Saute garlic, onion and mushrooms in 3 tablespoons olive oil.
    When soft, add tomatoes.
    Season with oregano, basil, bay leaf, salt and pepper.
    Simmer 10 to 12 minutes.
    Add spinach.
    Simmer 20 minutes.
    Serve over pasta with grated cheese.
