Real Cajun Red Beans And Rice - cooking recipe

Ingredients
    1 lb. dried red beans, soaked overnight
    1/2 lb. bacon
    2 qt. water
    3 c. chopped yellow onions
    1 bunch green onions, chopped
    1 c. chopped bell peppers
    2 large pods garlic, crushed
    1 tsp. salt
    1 tsp. black pepper
    1 tsp. cayenne
    1/4 tsp. oregano
    3 generous dashes Tabasco sauce
    1 Tbsp. Worcestershire sauce
    1 ( 8oz.) can tomato sauce
    1/4 tsp. leaf thyme
    1 lb. bulk sausage (hot), made into small patties
Preparation
    Cook beans and bacon (which has been thinly sliced) in salted water slowly for 45 minutes.
    Add vegetables, seasonings and tomato sauce.
    Cook slowly another hour.
    Stir occasionally.
    Fry sausage; set aside, then add to beans and cook another 45 minutes. Cool, but do not refrigerate for an hour or two.
    Then, reheat and bring to a boil, then lower heat and simmer gently for 30 to 40 minutes.
    The important thing is to serve over boiled rice.
