Zucchini And Green Rice - cooking recipe

Ingredients
    1 1/2 lb. zucchini
    3/4 c. chopped parsley
    juice of 1 lemon
    1 c. low-fat cottage cheese
    1 tsp. salt
    pinch of pepper
    1 tsp. basil
    2 Tbsp. oil
    2 c. cooked brown rice
    1/2 c. grated Cheddar cheese
    2 Tbsp. grated Parmesan cheese
Preparation
    Slice zucchini in 1/4 inch rounds.
    Steam until done but still firm.
    Preheat oven to 350\u00b0.
    Mix rice with lemon juice, parsley and seasonings.
    In a greased casserole make a layer each of rice mixture, cottage cheese and zucchini.
    Top with grated cheese. Bake uncovered for 10 to 15 minutes.
    Sprinkle with Parmesan cheese.
    (You may want to use more cheese than is suggested.)
