Smothered Okra - cooking recipe
Ingredients

1 large onion, chopped
1/2 c. chopped green pepper
2 Tbsp. butter
2 c. sliced okra or 10 oz. frozen okra
2 medium tomatoes, peeled and chopped
1/4 tsp. salt
1/4 tsp. ground red pepper
1/8 tsp. black pepper
Preparation

In a skillet, cook onion and green pepper in butter for about 5 minutes.
Stir in okra, tomatoes, salt, red pepper and black pepper.
Bring to boil.
Reduce heat.
Cover and simmer for 30 to 35 minutes for fresh okra, 15 minutes for frozen okra or until okra is tender.
Makes 6 servings.
