Southern Crab Cakes - cooking recipe
Ingredients

2 c. cooked crab meat (freed of membrane)
1 1/2 tsp. salt
1 tsp. dry mustard
2 tsp. Worcestershire sauce
1 egg yolk
1 Tbsp. mayonnaise
2 tsp. minced parsley
flour
2 Tbsp. milk
1 egg, slightly beaten
finely sifted bread crumbs
butter
Preparation

Mix first 7 ingredients together.
Press mixture into 8 firm cakes.
Chill well.
Just before serving, dip cakes in flour, then in bread crumbs.
Melt small amount of butter in frying pan; saute cakes quickly over high heat until golden brown, turning once.
Serve on warm platter.
Makes 4 to 5 servings.
