Vongoli Casino(Clams Casino) - cooking recipe
Ingredients

2 doz. top of neck or littleneck clams
1 Tbsp. chopped parsley
1 Tbsp. dry basil
3 Tbsp. picorino cheese
1 c. cracker crumbs
1 clove garlic, chopped fine
Preparation

Scrub clams in very cold water.
Dry and open.
Remove top shell and leave meat in bottom half.
Mix cheese, parsley, basil, garlic and cracker crumbs.
Sprinkle heaping tablespoon over clams.
Broil for about 3 to 5 minutes.
Do not burn.
Serve hot.
