Baked Fish With Vegetables - cooking recipe

1 Tbsp. oil
1 lb. fish
1 Tbsp. salt
1 Tbsp. pepper
1 (12 oz.) can mixed vegetables, drained
2 small onions, thinly sliced
2 small tomatoes, thinly sliced
4 slices bacon
Preparation

Preheat oven to 400\u00b0.
Grease baking dish lightly with oil. Place fish, flesh side up, in greased baking dish.
Sprinkle with salt and pepper. Spread mixed vegetables over fish.
Place onion and tomato slices over vegetables.
Sprinkle lightly with salt and pepper. Top with bacon. Bake for 30 to 45 minutes or until fish flakes easily.
Yields 4 servings.
