Horchata(Mexican Rice Drink) - cooking recipe

Ingredients
    1/2 Cup Uncooked Rice
    1 qt. Water
    1 Cinnamon Stick
    3 Tbsp. Sugar
    Juice of 1/2 Lime (Optional)
Preparation
    Mix together rice, water, cinnamon stick & sugar.
    Let stand for 3 hours.
    Simmer for 20 minutes.
    Cool mixture, discard cinnamon stick.
    Puree in a blender.
    Use a spoon to push mixture through a medium mesh sieve.
    If it seems stiff, add enough cold water to bring it to the consistency of cream.
    Add lime if desires and sugar to taste.
    Chill & serve over ice.
    Makes two generous glasses.
