Spanish Rice(Sopa De Arroz) - cooking recipe

Ingredients
    5 Tbsp. oil
    2 c. long grain rice
    1 (6 or 7 oz.) can tomatoes
    2 Tbsp. salt
    1 Tbsp. pepper
    6 c. water
    1/2 c. onion, chopped
    1/2 c. celery, chopped
    1/2 c. bell pepper, chopped
    1 small can mushrooms, drained
Preparation
    Heat oil until sizzling hot.
    Add rice and cook until deep brown, stirring constantly to prevent burning.
    Add all other ingredients and mix well.
    Cover and reduce heat to medium; do not open or stir for 20 minutes.
    After time is up, let set for 15 additional minutes before serving.
    Serves 10.
